Cuvée Vecchio Collezzione
Principle: light and fruity wines, easy to drink. From 4 different terroirs.
Vecchio Collezzione white
- Vineyard: From a North facing plot on light and gravel orange clay.
- Grape varieties : Vermentinu
- Harvest : Manual
- Vinification: direct pressing, fermentation in stainless steel vats, temperature controlled (15-18°C)
- Tasting notes: Citrus flavours (grapefruit, lemon zest, citron), white pear acacia lime blossom, as well as a hint of smoke, a full-bodied wine with an iodine note.
- Cellaring: 6-7 years
- The food/wine pairing: oysters, shellfish, seafood and fish
Vecchio Collezzione red
- Vineyard: From a West facing plot on red and heavy clays, and coarse gravel.
- Grape varieties: niellucciu, sciaccarellu, minustellu, grenache and syrah
- Harvest : Manual
- Vinification: maceration for 4-5 weeks with pigéage, temperature controlled (20-25C°), then malolactic fermentation in vats and barrels (5-10%).
- Tasting notes: Black myrtle cherry aromas, full with supple but powerful tannins.
- Cellaring: 6-7 years.
- The food/wine pairing: cold meats, grilled meats, fish in sauce and stews
A Gallina Rosa

- Vineyard: From a north-facing plot on light and gravelly orange clays.
Viticulture: Reasoned culture with respect for the environment and the life of the soil.
Grapes: 100% Sciaccarellu.
Harvest: Manual
Vinification: Direct cold pressing, temperature-controlled fermentation at 15°C.
Tasting: With aromas of citrus fruits and white flowers with a lively mouthfeel and blackcurrant, strawberry and candy buds.
Aging: 1 year and a half
Uva Antica
Characteristics: Ancient and mythical grape varieties, Minustellu in red. Bianco Gentile in white Powerful and aromatic wines, for gourmet meals
The Bianco Gentile
Bianco Gentile is an old endemic Corsican grape variety. It expresses its full aromatic palette on our grounds in Tallone.
- Vineyard: From a north-facing plot on light and gravelly orange clays.
Viticulture: Reasoned culture with respect for the environment and the life of the soil.
Varietal: Bianco Gentile
Harvest: Manual
Vinification: Vinified and aged in barrels for 2 to 4 years. For about 9 months.
Tasting: With aromas of undergrowth, white truffle, candied citron, vanilla and grilled toast. We will note a great length in the mouth as well as its fatness. Robust and structured wine.
Aging: 10 years
Minustellu
- Vineyard: From a North facing plot on light and gravel orange clay.
- Grape varieties: Minustellu
- Harvest: Manual
- Vinification: Maceration 4-5 weeks then matured in oak barrels (25% maturing over 10 months).
- Tasting notes: Pepper perfumes covered by a hint of prunes and candied cherries, very velvety with good acidity which will allow its ageing.
- Cellaring: 6-7 years
- The food/wine pairing: character meats, game and cheeses tab

Mélusine
An exceptional vintage where elegance and fullness meet to offer us the best nectar.
Characteristics: 100% traditional grape varieties, 15 hl/ha maximum, close to over maturity, macerations pushed to the extreme and ageing in barrels.
For Gastronomic meals.
Red Mélusine
- Vineyard: From an East facing plot on light orange clay, shale and limestone.
- Grape varieties: Niellucciu
- Harvest: severe pruning, debudding, green harvesting and several passages in maturity, the choice of bunches is made by hand, in order to check the maturity, the grape skin must have little resistance.
- Vinification: Maceration 6-7 weeks then matured in oak barrels (100% maturing over 15 months)
- Tasting notes: Flavours of liquorice, violet, sweet cherry, myrtle chocolate, resinous. Full, fleshy and velvety on the palate, with silky tannins.
- Cellaring: 10 years
- The food/wine pairing: beef chop, lamb, duck and chocolate dessert
White Mélusine
- Vineyard: From a plot oriented North on light and gravel orange clays.
- Grape varieties: Vermentino
- Harvest: 3 harvests in green and 2-3 passages in maturity, the choice of bunches is made visually when they begin to be tinted with orange reflections, which will assure the presence of tannins for the ageing.
- Vinification: Skin maceration, then matured in oak barrels for 9 months.
- Tasting notes: We find the characteristics of the vermentino (white vecchio) on the notes of citrus, etc... but to this is added acacia honey from pineapple, smoked, peaty and full-bodied with an incomparably long lasting flavour.
- Cellaring: 10 years
- The food/wine pairing: sea urchins, lobsters, grilled lobster, sushi, crayfish with Nantua sauce and cheese.
Beau-tri-tys
Cuvée de découverte
Characteristics: the vermentino from every angle, 3rd version. For foie gras, dessert and aperitif.
- Vineyard: From a North facing plot on light and gravel orange clays. Subject to morning mists until 11h00 throughout the month of October.
- Grape varieties: Vermentino
- Harvest: Selection of noble grains, we only pick grapes affected by noble rot, from 24° potential.
- Inification: Skin maceration, then matured in oak barrels (maturing 9 months), which results in 14.5%vol and 95g of residual sugar.
- Tasting notes: As for the white Mélusine, we find citrus characteristics in the vermentino (white vecchio), but added to this is, notes of apricot, kaki, and honey, rounding off the flavours, leaving a slightly iodised and smoky finale.
- Cellaring: 15 years
- The food/wine pairing: Aperitif, foie gras, cheese and desserts.
